However, what makes the stay even more rewarding is the incredible food offered at Diavolo restaurant on the resorts lower level, with 270-degree views of the Andaman Sea. With Executive Chef Jordi Claverol taking the reins in the kitchen, the team at Diavolo uses the freshest ingredients to create modern and traditional Italian flavors that wow guests and locals alike.
We were lucky to witness Chef Jordi in action at the resort’s beautiful cooking school facilities with floor to ceiling windows, which overlook the sea and stunning landscape.
The first item up for tasting was an exquisite foie gras Rougie served with roasted apples scented with rosemary, oignons au vin rouge and chicken jus. The perfect combination of savory and sweet, the foie gras itself melted in your mouth while the apples provided a wonderful texture with out being overly sweet and the rosemary offering a subtle hint of flavor. All in all, it was perfection.
The next dish was a wonderful Salmon Sherry made with Norwegian salmon, slow cooked in sherry, blow torched and served in a creamy saffron sauce ‘all I oli’, croutons and sautéed spinach. The salmon was incredibly tender and fresh tasting with the sauce offering a little depth of flavor and saltiness. The spinach added more heft to the plate, making this dish the perfect meal to walk away from completely satisfied.
Lastly, we were given the short rib – a slow-cooked Wagyu short rib served with beetroot, young carrots, gremolata and beef jus. The beef was so incredibly tender and was the perfect amount of sweet and savory. It gave air to a slow roast one would have with their family on special occasions. This was definitely the winner of the afternoon and a dish we will certainly be ordering again and again.
To end your meal on a sweet note, we recommend having a glass of freshly made sangria with wonderful fresh and stewed fruits in a generous portion of quality red wine!
