Once inside, you are put at ease with the relaxing black and red interior, which is inundated with natural light during the day and lit up with a warm candlelight glow in the evening. Chef Pablo Blattmann takes the reins in the kitchen with years of experience and training with Master of French Gastronomy Paul Bocuse at the renowned Institut Paul Bocuse. With traditional dishes, such as Escargots Bourguignonne and Frog Legs, DeDos’s menu is a culinary journey for the taste buds.

An excellent way to begin is with the Crabmeat-Wasabi salad with mango-sesame salsa and fresh coriander. The crab is incredibly fresh and tender while the heat and the sweetness of the mango and wasabi delicately dance around with the fresh coriander. It is certainly a way to wake up one’s appetite. Another dish full of complementary flavors is the Tatar Duo – a wonderful combination of European-style tuna tartar and Asian-style salmon tartar. The salmon is tender with a perfect amount of dill and capers, while the fresh tuna melds wonderfully with a mixture of cucumber and seaweed – an incredible combo.

As for mains, the true stars of the menu are the DeDos Tuna, the Flight & Tide and the Rack of Lamb. The DeDos Tuna comprises pan-seared Yellow Fin tuna coated in a cashew nut-black pepper robe and served with taboule and wasabi crème fraiche. The cashews not only offer and amazing texture to the beautiful tuna, they also provide a bit of sweetness, which perfectly blends with the kick from the wasabi. This dish is not only spectacular, but incredible filling. Flight & Tide is the harmonious combination of pan-seared duck breast and tiger prawns splashed with a foie gras orange sauce and served with potato gratin and seasonal vegetables. The duck is cooked beautifully, as are the prawn, with the sauce offering a perfect amount of sweetness and dimension without taking away from the natural flavors of the meat.

As for the Rack of Lamb, it is incredibly tender and cooked with fresh thyme and garlic and braised in a shallot and red wine sauce. Served with gratin dauphinois, this dish is a fine diners heaven, full of flavor and equally beautiful to look at.

As far as dessert is concerned, one must absolutely try the DeDos Chocolate Mousse Dreams. It is by far the most rich and decadent trio of chocolate mousse on the island and is worth traveling far and wide for. A perfect ending to a perfect meal.

There are many places on the island that claim to give a serene and impeccable fine-dining experience, and I am happy say that DeDos is hands down one of the best by far.

With Chef Pablo’s mastery of incredible cuisine and his and his staff’s dedication to making each guest’s experience one to remember, DeDos has made a huge mark on Phuket’s culinary map and should absolutely be on everyone’s must-try list.
